The recipe of the chicken pechay wrap in coconut cream has flooded my Facebook timeline sometime last year. I remember someone posted the recipe in one of the Facebook groups then all of a sudden, everybody was cooking it.
Eversince I started creating my weekly menu plans, Z’s nanny had an easier time cooking our meals during the week. She no longer has to decide on her own or wait for me to tell her what to cook. Menu planning has definitely made our lives easier. No kidding on that, especially for a working mom like me.
However, on weekends, I take over the reigns in the kitchen. Weekends are the times when I am able to cook something that is not usually included in our plans. I get to experiment on different recipes or even come up with my own.
Embutido is a Filipino-style meatloaf which is usually served during feasts. It’s a great dish that kids really love. What I really like about this is that you can make it in advance and freeze it for later consumption. It’s actually an easy dish to make, I wonder why I have never tried to make it before.
I’ve been buying cabbage recently and it is mostly added to soup dishes that Z’s nanny cooks. Then I remembered something that my parents used to cook when we were kids so I called my Mom and asked her how the cabbage rolls were done. I initially thought it was lettuce rolls. On the other hand, lettuce can be used for this, too.
I am not a cook. Well, I can cook but not as good as my siblings. They whip some real great tasting meals, believe me. But when I have time and I am in the mood, I cook. It’s a hit and miss thing for me, though. 🙂 Anyway, since rainy days are now upon us, I was craving for corn soup for the past few weeks but since I can’t find (I don’t know where to find, rather) native corn for what I have in mind, I settled for the sweet corn that I found in the grocery. I just got home from work. Well, not exactly. I came home about thirty minutes ago (and it’s already 4:46AM this side of the world as I type this). I got off work at around 3:30AM, went to the bus terminal to get a ticket for tomorrow when I go home to see my little Z. And boy, am I glad that I decided to get a ticket already. I am bored. It’s 3 AM this side of the world and I am still awake. I just got home an hour ago and I should have already been done with my “nightly” routine and in bed, either surfing the net or watching a movie. I am typing this  in my living room with the TV on but not really watching. I am in the mood to bake cookies but I forgot to buy a couple of the missing ingredients and I am not in the mood to do my nails because it will take some time before the polish will dry. So, […]
